Cookie dough
- 30 grams coconut oil
- 1 portion Almond Pulp leftover from making Almond Milk
- 100 grams medjool dates (pitted)
- 45 grams Shredded coconut
- 50 grams dried cranberries

Preheat oven 170 degrees
Prepare an oven tray with baking paper
Add Coconut oil to Thermomix bowl, if solid; melt 37 degrees/ 1.30 minutes/ speed 1
Add Almond pulp and Dates; speed 6/ 8 seconds, scrape sides of bowl and repeat
Add Shredded Coconut and Cranberries; speed 5/ 5 seconds, scrape sides and repeat
Divide cookie dough into approximately 18 portions, roll into balls and flattern on to oven tray
Bake for 20-25 minutes

You can use different dried fruit such as Apricots or Sultanas

What amount is a portion in grams?
I made these for a couple of friends and they loved them. So did hubby and daughter. I substituted with 450g of almond meal and added an egg and a couple of teaspoons of natvia sweetener. Made 18 cookies and my friends have asked for the recipe!
These were super easy and delicious, although very sweet.
Need to press the cookies into the shape you want them to end up - they don’t spread out like regular flour/butter/egg cookies. Will definitely make these again!
I have made this a few times now and really like them! I use 50 gm dates and 50 grams prunes And instead of cranberries I use sultana.
Yum! A great way to use the leftover almond pulp. I didn't have cranberries so I added seeds, honey and goji berries - they're fab, thank you so much for sharing
I would like to try this but what's the amount of pulp? Different almond milk recipes will have different amount of pulp leftover... Ie. Are you able to add grams or whether it is 1 cup of pulp or 1/2 cup or whatever Cup? Thanks!
This was a good recipe. Biscuits needed be cooked a little longer and turned over but we like ours soft anyway.
I don't make almond milk. Could I use almond meal instead? What quantity would I use as I don't know what a portion represents?
