Keto Low Carb Paleo Blueberry Muffins
- 250 g Blanched Almond Flour
- 40 g Granulated sweetner, Replacement sugar like Monkfruit
- 1,5 teaspoons baking powder
- 1/4 teaspoons sea salt
- 61 g coconut oil
- 80 g Almond milk
- 3 large eggs
- 1/2 teaspoons vanilla extract
- 135 g blueberries

- Preheat the oven to 180 deg C. Line a muffin pan with 10 or 12 silicone or parchment paper muffin liners.
- In a large bowl, stir together the almond flour, erythritol (replacement sweetener), baking powder, and sea salt. Place MC on lid and blend for 20 sec on speed 4.
- Stir with a spatula.
- Add the coconut oil, almond milk, eggs, and vanilla extract to the bowl. Place MC on the lid. Blend for 15 seconds on speed 4.
- Scrape the sides and mix again for a further 20 seconds on speed 4. MC on.
- Fold in the blueberries. "Counter-clockwise operation" Reverse speed 0.5 for 30 sec
- Distribute the batter evenly among the muffin cups. Bake for about 20-25 minutes, until the top is golden
Tip
The recipe calls for almond milk - you can use any milk you have in your fridge.
This recipe works with almond flour as well as almond meal.
I am using Monkfruit Erythritol granulated sweetener - the taste is very close to sugar.
