Kirstie’s Banana Bread

  • 190g Butter
  • 525g Ripe banana
  • 1 Red apple
  • 180g Raw or coconut sugar
  • 3 eggs
  • 330g plain flour
  • 1 Pinch salt
  • 1.5 tsp Bi-carb soda
  • 2 tsp baking powder
  • 100g Milk
  • 3 tsp vanilla essence
  • 1 tsp ground cinnamon

Recipe's preparation

  1. Preheat oven to 160degrees

    Grease a 680g bread tin and set aside

    Place 525g ripe bananas and 1 apple into mixing bowl and mash 5 seconds/Speed 6

    Add 190g BUtter and 180g sugar and mix 30 seconds/speed 4

    Add eggs and mix 10 seconds/ SPeed 4

    Add 330g plain flour, 1 pinch salt, 2 tsp baking powder, 1.5 tsp bi-carb soda, 100g milk, 3 tsp vanilla and 1 tsp cinnamon and combine 30 seconds/ speed 4

    Pour into prepped loaf tin and bake for 60-70 mins or until a wooden skewer comes out clean.

    cool in tin for 10 mins before cooling on a rack

Tip

Best served warm with baileys or vanilla custard

Keep in airtight container for 3-4 days, recipe suitable for freezing

Use of riper bananas will make this sweeter
adjust sugar levels to suit your tastes
