LISA'S CHOC CHIP BISCUITS

  • 150 grams Butter, unsalted
  • 40 grams caster sugar
  • 40 grams brown sugar
  • 1 teaspoons vanilla extract, pure
  • 1 egg
  • 1 egg yolk
  • 300 grams plain flour
  • 1 pinches salt
  • 1/2 teaspoons bicarbonate of soda
  • 200 grams chocolate chip, milk chocolate

Recipe's preparation

    1. Pre-heat oven
  1. Pre-heat oven to 170 degrees celcius
  2. Add butter to bowl, then melt for 1 minute, 65 degrees, speed 2
  3. Add sugar, vanilla, egg, egg yolk, flour, bicarb and salt. Mix for 25 sec / speed 6
  4. Add chocolate chips and stir in by hand with spatula
  5. Place heaped tablespoon in hand and roll into a ball. Place on tray and press with a fork
  6. Bake in pre-heated oven for 15 minutes or until golden brown. Allow to cool on a cooling rack.

    I liked the look of these biscuits not being too flat, so gave them a go with a GF flour swap.
    I trusted the recipe with the warm up of the cold butter and it worked perfectly. I found the centre of the biscuit a bit undercooked So returned to a cooler oven about 130 C for about 15 mins and they finished of beautifully. A little more crumbly because Of the GF flour but very delicious.

    We made theae this afternoon but the chocolaye melted all through the mixture and looks nothing like the picture. Not sure what happened 😬
