Ingredients

Last Minute Fruit Mince

  • 50 g Butter
  • 500 g Marmalade
  • 375 g sultanas
  • 375 g raisins
  • 375 g currants
  • .25 litres brandy, port, sherry, scotch, I use scots whiskey
  • .5 portions 1/2 cup brown, caster or raw sugar, this is approx and to taste.
  • 1 portions nutmeg, cinnamon, allspice, ginger, to taste

Recipe's preparation

    Add butter and marmalade and melt
  1. Gentle stir setting"Gentle stir setting" Sous-vide"Sous-vide" 90 for about 2mins
  2. add fruit and one marmalade jar of alcohol, then sugar
    allow to simmer
    Gentle stir setting"Gentle stir setting" Sous-vide"Sous-vide" 80 5 mins
  3. strip the cupboard of half open fruit, glaced or dried. Crfanberries are great, ginger as well.

    add to bowl

    add more booze, more sugar and spice, more booze again..

    Let simmer for 5 mins

  4. you can cover and refrigerate or pour into container and allow to cool overnight.

    Allow to sit for a day or so, and its ready to use

    Love this, looks and tastes great and used up some of my excess homemade lemon marmalade too.

    Yes, I used all the opened fruit in the pantry, chucked in a few slivered almonds and some dried coconut slivers too tmrc_emoticons.-) thanks for posting this recipe.

    Instructions did need a little thinking about though, was half-edited, I think tmrc_emoticons.-)

    I used 2.5 tsp in total of the spices
    250ml in total of spirits
    100g of sugar

    Instruction to add butter and marmalade is given in bold type, before step 1. That had me scratching my head for a couple of minutes but turned out great.
