Ingredients

Brownie

  • peel of 1/2 a lemon, Can use a whole lemon if you prefer them extra lemony.
  • Juice of 1/2 a Lemon
  • 100 grams plain flour, I do 50g wholemeal, 50g white but you can use all white
  • 2 eggs
  • 100 grams Butter
  • 140 grams raw sugar, Can use white sugar instead
  • 1/4 teaspoon salt

Glaze

  • 110 grams raw sugar, or white sugar, it will be made into icing sugar.
  • zest of 1/2 lemon
  • juice of 1/2 lemon

Recipe's preparation

    This recipe was adapted from Rita's recipes to work in a thermomix. If you want your brownies to look more white and yellow as hers do, use white sugar and all white flour instead of raw sugar and wholemeal flour. //rita-may-recipes.blogspot.com.au/2011/08/lemon-brownies.html
  1. Describe the preparation steps of your recipe

  2. Brownies
  3. Preheat oven to 180 degrees celcius. Line a small brownie tin with baking paper.

    1. Put peel into TM, chop rind 10 sec/ speed 9. Scrape down sides of bowl.

    2. Add remaining brownie ingredients, mix 20 sec/ speed 5.

    Pour mixture into brownie tin and cook for 25-30mins. Place on cooling rack and allow to cool completely. Clean and dry TM bowl while brownies are cooking.

  5. 1. Put lemon peel and sugar into TM, mill for 15 sec/ speed 9.

    2. Add lemon juice, mix 10sec/ Speed 3.

    Pour over cooled brownies and cut into 12 pieces.

Tip

I prefer the wholemeal, raw sugar version and adding extra lemon,  though my husband prefers the white sugar and flour and just the amount of lemon I listed. It's a pretty flexible recipe so feel free to make changes to suit what you like.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
