Ingredients

Lemon Fudge

  • 180 g white chocolate
  • 160 g white sugar
  • 2 tbsp lemon zest, grated, (approximately 2 lemons)
  • 395 g condensed milk, (not skim)
  • 120 g Butter, (chopped)
  • 50 g golden syrup
  • 25 g lemon juice
  • 50 g glucose syrup
  • 1/8 tsp citric acid
  • 1/4 tsp ground turmeric, (optional or yellow food colouring)

Recipe's preparation

  1. 1. Break up chocolate and add to Closed lid"Closed lid" , chop 5 seconds, speed 9. Set aside, use a spatula to scrape sides. No need to rinse bowl.
    2. Add white sugar and lemon zest to Closed lid"Closed lid" , mill 20 seconds, speed 9.
    3. Add condensed milk, butter, golden syrup, lemon juice, glucose syrup, citric acid, and colouring if using (turmeric or food colouring). Cook for 8 minutes, 100 degrees, speed 3, MC removed.
    4. Scrape sides and bottom of bowl with spatula. Cook for a further 20 minutes, varoma, speed 3, MC removed.
    5. Add chocolate to Closed lid"Closed lid" , mix 10 seconds, speed 4, MC removed. Scrape sides and repeat if necessary.
    6. Pour into lined 15x25 cm slice tin. Refrigerate until set. Cut into small squares.

    Lovely fudge well worth making.
    Didn't have citric acids but substituted with 1/2 tbsp bottled lemon juice instead.
    Will definitely be making again.

    This recipe is fantastic, it is not too sweet and sets well. I made my own batch of Cookidoo condensed milk first and used the whole batch (slightly over 395g).
