Ingredients
Lunch Box Banana Muffins (adapted from Cookie + Kate)
- 60 g coconut oil, Melted, cooled
- 130 g Maple syrup
- 60 g soy milk, (Any milk, not containing nuts)
- 3 --- ripe bananas
- 2 --- eggs
- 1 level tsp baking soda
- 1 level tsp vanilla extract
- Half teaspoon salt
- Half teaspoon ground cinnamon
- 250 g Whole Wheat Flour
- 30 g rolled oats
- 1 level tbsp Ground pepitas and sunflower seed mix
- 1 level tbsp Nutraorganic protein powder
- 50 g Saltanas, (Mix saltanas in a small bowl with 1 tsp flour)

- "Blend" Mix 4 seconds speed 4
- "Blend" Mix 5 seconds speed 4
- Add saltanas. "Blend" "Counter-clockwise operation" 5 seconds speed 3.5
Coconut oil, maple syrup, milk, ripe bananas
Eggs, baking soda, vanilla, salt, cinnamon
Add flour, oats, seed mix, protein
Tip
You can add fresh or frozen blueberries to these, perhaps reduce milk to 40g

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
