- 130 g macadamia nuts
- 130 g Puffed rice
- 170 g Rice malt syrup
- 1 tsp Vanilla powder, (or 1 Tbspn vanilla extract)

Blitz macadamia nuts 1 min, speed 9 into a smooth paste. You may like to scrape down every 20 seconds.
Add rice malt syrup and vanilla and cook 6 mins, 100°C, speed 3 stopping to scrape down after 1 minute.
Add rice puffs and stir 10 secs, "Counter-clockwise operation" , speed 3.
Pour into a lined 20cm square tin, and push slice down with top of measuring cup.
Refrigerate 15mins or until set. Slice into 18 pieces and enjoy.

Tip

Check to ensure your rice puffs are low sugar, or sugar free.
If you use puffed brown rice, the bars will be chewey rather than crispy.

Too easy. I made these for the kids but I think I'll eat them x
These weren't great and I found them too faffy to make. I slowly added the puffed rice as suggested but in doing this the rice syrup had hardened so I had to re-heat. I reduced the quantity of puffed rice and I put them to set in the fridge but found a large portion of the puffed rice was loose so made a mess when I cam to cut them, I also struggled to cut as it was set hard.
If I made again I would pour all the puffed rice in one go, mix with the temperature up to keep them moist and then pour into muffin cases and then set to save the mess of cutting them.
These were a hit. I made them for an after school play date, and they were devoured. I like that they are not too sweet, and a relatively healthy treat.
Definitely add the puffed rice a quarter at a time....and we found that 100grams of the puffed rice was perfect! Kiddos love these!!! Nice work Sarah Wilson!!!
Such a simple recipe. So quick to make and really yummy! I added some dessicated coconut along with the rice puffs and it was a hit with everyone.
Replaced honey for rice syrup, taste awesome!
Super quick and easy to make. A great snack that's not too sweet. I pushed some chic chips into the top of mine for a treat for the kids. You definitely have to add the rice puffs in half (or even quarter) at a time and also give it a manual stir at the end to make sure it mixes properly though
These are great! My kids hassle me to buy LCMs whenever they see them at the grocery shop, I flatly refuse. They loved these bars. I made them with honey instead of rice malt syrup without any problems with the mix. (we don't have rice malt syrup at our grocery shop.)
Don't add all the puffed rice at once, take your time and do it slowly, otherwise the TM will be too full and won't mix it properly.
Please note these are not very sweet, so don't expect traditional LCM bars. They would be nice I think with some coconut, or even sunflower seeds/pepitas added along with the puffed rice.
