Ingredients
Cakes
- 80 g cup almonds, Dry roasted
- 200 g Brazil Nuts
- 250 g Macadamia halves
- 400 g mixed glace fruit, pineapple rings, apricots, figs
- 200 g mixed glace cherries
- 250 g raisins
- 375 g dates, pitted, Halved
- 125 g flour, Plain
- 80 g flour, Self raising
- 1 tsp cinnamon, Ground
- 2 eggs
- 100 g Dark Brown Sugar
- 100 g brandy
- 2 tsp finely grated orange rind
- 125 g apricot conserve

I'm cooking this todayRecipe's preparation
1. Preheat oven 150C
2. Grease loaf tins, line with baking paper with 2 cm overhang
3. Place half the nuts,glacé fruit and cherries in bowl, chop 2 seconds, speed 8
4. Add raisins and dates, mix 5 seconds on speed 6.
5. Sift flours and cinnamon and add 1/4 cup to fruit mixture. Remove mixture, clean bowl, insert butterfly.
6. Place eggs, sugar, 2 tablespoons brandy and rind into bowl, beat 2 minutes on speed 6 until light and fluffy.
7. Add remaining flour mix 10 seconds on speed 6. Remove butterfly.
8. Pour fruit mixture into bowl and gently mix 5 seconds, speed 6.
9. Spoon into prepared tins, press down with back of spoon.
10. Cut remaining glacé fruit into quarters.
11. Press gently onto top of cakes with whole nuts and whole cherries.
12. Cover top of cakes with sheet of baking paper.
13. Bake 45 minutes.
14. Whilst cakes are cooking place apricot conserve and remaining brandy into bowl, cook 1 minute, temp 100C, speed 2.
15. When cakes are cooked and still warm brush with brandy mixture.
16. Cool in tins, lift out remove baking paper and wrap in cellophane for gifts!
