Ingredients
- instant coffee, 1 1/2 Tbsp
- cocoa, 1/2 cup
- hot water, 1/2 cup
- cold water in jug, 1/2 cup
- 100 g Butter
- 270 g Raw caster sugar
- 220 g SR flour
- 1 tsp baking powder
- 2 eggs
- 1 tbsp vanilla

1. preheat oven 170c
2. line muffin trays with paper liners
3. mix together in jug or bowl the instant coffee, cocoa and hot water. When combined stir through cold water then set aside.
4. add butter to TM and set to 2min, 60c, speed 4
5. then add remainder of ingredients to TM adding the coffe/cocoa mixture last.
6. mix all the ingredients on speed 5 for 30sec
7. pour mixture into muffin tray filling them 2/3
8. bake for 18-20min
Tip
These cupcakes are great different types of frostings:
Vanilla butter
Choc butter
good old fashioned icing (icing sugar, cocoa & hot water)
or a simple dusting of icing sugar.
For WOW factor make either vanilla butter frosting or choc butter frosting, pipe a rosette on top in the centre of cupcake and top with a coffee bean.

Very good!!!!
Wonderful recipe, everything you would want from a cupcake and more. A surprisingly delicious light moist and flavoursome cupcake which is so delicious it really doesn't require icing! Big tick from me!
