Ingredients

Monte Carlo Biscuits

  • 1-2 slices Lemon peel
  • 125 g raw sugar
  • 2 tbsp golden syrup
  • 125 g Butter
  • 1 tsp vanilla
  • 1 egg
  • 40 g Desiccated Coconut
  • 240 g plain flour, GF works as well
  • 60 g Butter
  • 150 g icing sugar
  • 2 tsp Milk

Recipe's preparation

    Biscuits
  1. 1. Place lemon peel and suagr into TM bowl and mill 10 sec/sp10
  2. 2. Add golden syrup, butter, vanilla and blend 30 sec/sp3.5
  3. 3. Scrape down the sides and cream 20 sec/sp3.4
  4. 4. Add egg, coconut and flour and combine 15sec/sp4. Scrape down sides and combine for 5sec/sp4.
  5. 5. Roll into 2 logs and placein the fridge for 15mins.
  6. 6. Remove and slice into 1cm pieces and place on a tray. Cook at 180 degrees for 14mins.
  7. To make icing - add all ingredents to the bowl and combine 1min/sp3 or until fluffy
  8. Once biscuits are cool, add jam and cream to centre and enjoy.
