Marshmallow fluff
- 170g sugar
- 180g glucose syrup
- 60g water
- 1/8tsp salt
- 2 egg whites
- 1/4tsp cream of tartar
- 1tsp vanilla extract

Place sugar, corn syrup, water and salt in bowl. Put on for 8min/Var/sp3
Remove syrup into a heat proof bowl (and cover with a towel to keep hot)
Quickly wash out bowl and dry well. Add butterfly whisk.
Place egg whites, cream of tartar salt in bowl and mix 3mins/37deg/sp3.5 until light and fluffy.
Place Thermomix on 4mins/sp4 and gradually pour the hot syrup through the lid. In the last 30seconds add the vanilla.
Use immediately or store in jars in fridge for 2 weeks.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Made this today to go on top of the ohhh emmm geee I Love your caramel slice instead of chocolate. PERFECTION. And sooooo easy to make! I have two thermys so while one does the sugar syrup the other does the egg whites. Thank you for sharing
This mentions salt in both the sugar syrup and the egg whites but only 1 quantity is given. Can you please clarify when salt gets added? Thanks
