Ingredients

Base

  • 20 g fresh ginger, cut into coins
  • 1 tablespoon golden syrup
  • 60 g Butter
  • 145 g self-raising flour
  • 90 g Coconut sugar
  • 40 g Desiccated Coconut
  • 1 egg

Icing

  • 1/2 rind of a lemon, peeled with a vegetable peeler
  • 10 g Butter
  • 1/2 Juice of a lemon
  • 160 g icing sugar

Recipe's preparation

    Base
  1. 1.       Preheat oven to 180 degree.

    2.       Chop ginger 5sec/sp5. Scrape down sides of bowl.

    3.       Place Golden Syrup and butter in bowl. Melt 3mins/50deg/sp2.

    4.       Add flour, sugar, coconut, egg. Mix for 10sec/sp4 Rev. Press into slice tin.

    5.       Bake for 20 mins.

    6.       Wash and dry bowl

  2. Icing
  3. 1.       Place lemon rind in bowl ad grate 10sec/sp7. Scrape down sides. Repeat  5sec/sp7. Scrape down sides.

    2.       Add butter. Melt 3mins/50deg/sp2.

    3.       Add remaining ingredients. Mix 5sec/sp4 or until combined.

    4.       Spread onto cooled base. Refrigerate and serve when icing is set.

Tip

Coconut sugar can be replaced by white sugar

Fresh ginger can be substututed for 2 tsp powdered ginger

    This slice was good. Used dry ginger instead of fresh ginger. Used 2t could have used more. Baked for 15 mins.

    5 out 5 for taste - totally yum, but lose a STAR for the difficulty of getting the sticky mixture out of the bowl and into the cake tin.

    Great recipe...next time i won't cook for too long as it dried out (all my doing, forgot the time!!).
