Ingredients

Banana Bread

  • 150 grams almonds
  • 150 grams brown sugar
  • 120 grams Butter, Softened
  • 2 eggs
  • 140 grams Self Raising Flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda, or Bicarbonate of soda
  • 70 grams golden syrup, or Honey
  • 1 teaspoon vanilla extract
  • 3 - 4 overripe bananas, Mashed

Recipe's preparation

    My 'Gloria Jean's' Style Banana Bread
  1. Measure almonds into bowl and mill for 15 seconds on 7. Pour into a bowl and set aside.

  2. Into the bowl, measure the butter and brown sugar. Mix for 1 minute on speed 4. Scrape sides of bowl.

  3. Add eggs and mix for 20 seconds on speed 4. Scrape sides of bowl.

  4. Add golden syrup and mashed banana and mix for 20 seconds on speed 6.

  5. Add almond/hazelnut meal, flour, cinnamon, bicarb soda and mix for 1 minute on speed 6 or until well combined.

  6. Pour mixture into greased loaf tin and bake at 160C for approximately 50-60 minutes.

Tip

You can add sliced banana on the top and glaze with golden syrup. 
Slice when cooled, and serve buttered tmrc_emoticons.)

    This is HANDS DOWN the best recipe ever!

    the picture doesn't do it justice! I add walnuts too! Some in the mix & some on top!

    Doesn't say when to add the vanilla essence. I expect it is with the eggs.

    This has been a great success. I made one loaf tin, plus 6 muffins aswell. Lovely warmed up with some butter.

    This has been my go-to banana bread recipe for two years now. It's absolutely beautiful. My slight adjustments:

    - lightly blitz 100g walnuts before starting, then set aside. Stir through at the end
    - i only add 120g of brown sugar
    - 50g of golden syrup
    - Cook for 65 minutes in a large bread loaf tin

    Delicious. I made it with coconut oil instead of butter because of allergies. I had to bake it longer because of large loaf tin and it was very moist and tasty. Will make again.

    I just made these as muffins size cakes.
