I'm cooking this todayRecipe's preparation
- 1. Grease middle size springform or similar with butter and sprinkle some bread crumps on top (prevents from sticking to the bottom and sites) make sure it greased up to the sides as well.
2. Place all the Ingredients for the Base in the "Closed lid" 2min/"Dough mode"
3. Roll out 2/3 of the dough into the base of your springform tin. Place the rest of the dough around the sides and press up against walls of your baking tin. This will give edge of 3cm high.
4. Place all the ingredients for the Filling into "Closed lid" 1 min/speed 5
5. Pour cheese filling into prepared tin and bake at 180-200C on the middle shelf of your oven for 60-75 minutes or until golden brown.
6. Check after 60 minutes with bamboo skewers if cooked through, if not keep in the oven for another 15 min. Depends on your oven it might take longer or shorter time to bake. Once cooked allow to cool down completely and add into refrigerator. Before serving add icing sugar & fresh berries.
Base and Filling
Tip
If you prefer vanilla to lemon you could substitute the lemon zest in the filling with 1 tbsp of vanilla paste. That way you have more a vanilla flavour cake instead of lemon.
This recipe is from my German Grandma which is usually made with "Quark" as this is not so easy to find in the local shops I adapted it slightly and used greek yogurt & cream cheese which also works well.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
