Ingredients

Base

  • 250 grams walnuts
  • 100 grams Coconut sugar, (or brown sugar)
  • 100 grams Coconut butter, (or butter)

Caramel

  • 100 grams Cashews raw
  • 4 mejool dates, pitted
  • 75 grams Maple syrup
  • 400 grams Premium Coconut Cream, no additives or emulsifiers
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tbsp Coconut butter
  • Mixed nuts of choice, 2-3 handfuls

Topping

  • 100 grams 85% dark chocolate, dairy free

Recipe's preparation

    Base
  1. Pre heat fan forced oven to 180 deg. Line a small slice tin.


    Grind walnuts on sp 4 for 10 secs. Remove and set aside in bowl. Add coconut butter and melt on 100 deg for 1 min and 30 sec on sp 1. Add walnut flour and coconut sugar and mix on sp 4 for 20 sec. Bake for 12-15 mins until golden. Leave to cool in tin.


     

  2. Caramel
  3. Clean thermomix bowl and blade and dry well. Add cashews and grind into a smooth paste on sp 9 for 1 min. Scrape down bowl. Add dates and purée on sp 9 for 30 sec. Add maple syrup, coconut cream, salt and vanilla extract. Cook on 100 deg for 45 min on sp 4 with the steamer basket on the top to let the steam escape. Check it is dark golden and thickened, if a little pale cook again for 10-15 mins. When cooked stir though coconut oil and add more salt if needed. It needs to be quite salty to counteract the richness of the caramel.


    Preheat oven to 180 deg. Place a couple of handfuls of nuts over the slice. A mix of cashews, almonds and walnuts are nice, just enough to cover the base. Pour the caramel over the nuts and smooth so it covers the whole base. Bake 10-15 mins until dark golden. Allow to cool.

  4. Topping
  5. Clean thermomix bowl, chop chocolate on sp 8 for 5 sec. Cook 3 mins and 30 sec on 50 deg, sp 1 until melted. Pour over cooled slice, make swirled patterns in chocolate with a spoon and refrigerate until firm.
