Ingredients

Cake

  • 100g sugar
  • 300g carrot, Chunks
  • 170g Plain Flour.
  • 1 teaspoon bicarbonate soda
  • 1/2 teaspoon Mixed Spice or Cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon Vanilla extract/ essence
  • 160 g oil, Olive, rice bran , sunflower, vegetable
  • 2 eggs
  • 65g walnut pieces

Frosting

  • 100g icing sugar
  • 40g Butter, Softened
  • 60g cream cheese, Cubed room temp
  • 2 teaspoons lemon juice

Recipe's preparation

    Cake
  1. Preheat oven 160 degrees

    Grease a 24cm Spring form cake tin with oil

    Place 200 grams of sugar into bowl 15 sec/ sp 10 and set aside.

    Add carrot chunks to bowl and chop 3 sec/  sp6.

    Add 100 grams of icing sugar and all other ingredients to bowl except walnuts and mix 5 sec/Counter-clockwise operation"Counter-clockwise operation" / sp 5 and scrape down sides .

    Add walnuts pieces and stir 3 sec/ Counter-clockwise operation"Counter-clockwise operation" /sp3

    Bake at 160 degrees for 50 mins or until a skewer comes out clean.

    Allow to cool completely before frosting.

    Frosting

    insert butterfly add butter and cream cheese and whip 1 min/sp4

    Add reserved icing sugar and mix 1min/sp3  Scrape down sides .

    Add lemon juice 15sec/sp1

    Set aside in the fridge until cake is cool.

    When cake is cool ice  and add extra walnuts or leave plain.

Tip

This is my MIL's recipe which we have been eating for more than 30 years. Thanks to my SIL who converted the recipe which I tweaked.I use olive oil but most oils work. Mill all 200 grams of sugar first and save a step. I have cut the sugar down by half so it's not overly sweet . Can be made in a loaf tin or as cup cakes. Cooking time for cupcakes is around 25 minutes. Keep an eye on them. Enjoytmrc_emoticons.)

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
