  • 500 grams flour
  • 30 grams golden syrup
  • 250 grams sultanas
  • 1 teaspoons baking soda
  • 1 tablespoons Boiling water, (freshly boiled)

Recipe's preparation

    Preheat oven to 150deg Celcius
  1. Cream butter, brown sugar and golden syrup for 2 mins on speed 3. Scrape down the bowl. Cream again for 30 seconds, speed 3.
  2. Add flour and mix 40 seconds on speed 4. Use the spatula to assist with mixing while blades are turning through the measuring cup hole. Scrape down the bowl.
  3. Add sultanas to the bowl and mix 30 seconds, speed 4 on REVERSECounter-clockwise operation"Counter-clockwise operation" , so as not to chop up the sultanas. Use the spatula to assist with mixing while blades are turning through measuring cup hole.

    MEANWHILE, disolve baking soda into freshly boiled water to the measuring cup and tip it into the jug while it is mixing in the raisins.
  4. If required, scrape down the bowl and re-mix it again for 20 seconds, speed 4, REVERSE Counter-clockwise operation"Counter-clockwise operation" until all is mixed in.

    Roll into balls and pess gently, cooking slowly in the oven - 150 degrees for 15-20mins (8-10mins in a fan forced oven). These spread nicely. This recipe can be halved, and will still make about 20 biscuits. They taste caramelly.

Tip

Darion recommends substituting sultanas with dried cranberries, and adding Whittakers dark chocolate, roughly chopped up at the same time.
