  • 125 grams Butter, chopped
  • 85 grams honey, liquid
  • 80 grams caster sugar
  • 90 grams sultanas
  • 75 grams dried cranberries
  • 85 grams dried and diced apricots
  • 110 grams rolled oats
  • 30 grams chia seeds
  • 75 grams plain flour
  • 15 grams mixed spice
  • 55 grams Pepita Seeds

Recipe's preparation

    Nut Free Muesli Bar
  1. I have converted this recipe to use in my TM5. Original recipe was from a Woolworth Fresh magazine.
    Thermomix method:
    1. Preheat oven to 180°/160°C fan forced, grease a 20cm x 30cm Lamington pan, line base and sides with baking paper extending paper 3cm above edges.
    2. Place butter, sugar and honey into TM bowl 6min/varoma/sp2.
    3. Add fruits to TM bowl 5sec/sp5.
    4. Add flour, chia seeds, rolled oats and mixed spice 5sec/sp5, scrape down sides of TM bowl.
    5. Add pepita seeds 5sec/sp5, or until combined.
    6. Put into prepared tray, press and spread evenly with the back of a spoon. (I measured 45-50gram and pressed into silicone bar tray and rectangular muffin pan see photo).
    7. Cook in preheated oven 180°/160°C fan forced oven for 25 minutes or until light golden and firm to touch. (My oven 20minutes, depends on individual ovens).
    8. Cool completely, then slice and serve.
    9. Keep in air tight container.

    Conventional Method:
    1. Preheat oven to 180°/160°C fan forced, grease. 20cm x 30cm Lamington pan. Line base and sides with baking paper, extending paper 3cm above edges.
    2. Place butter, honey and sugar in a small saucepan over medium heat. Cook, stirring, for 5 minute or until butter has melted and sugar has dissolved. Simmer for 2 minutes or until mixture reduces slightly. Remove pan from heat.
    3. Meanwhile, combine remaining ingredients in a large heatproof bowl. Add to butter mixture, stirring to combine. Using the back of a spoon, press mixture into base of pan. Bake for 25 minutes or until golden and firm to touch. Cool completely, then slice and serve.
