Ingredients

Nut-free muesli bar

  • 100 grams coconut oil, liquid
  • 140 grams honey
  • 1 tsp Vanilla Paste
  • 1/4 tsp ground cinnamon
  • 1/4 tsp salt
  • 75 grams Quinoa flakes
  • 75 grams rice flakes
  • 50 grams dessicated coconut
  • 125 grams Mixed seeds, pumpkin, sunflower, chia, sesame, flaxseeds, etc
  • 40 grams tapioca flour
  • 25 grams rice bubbles
  • 75 grams chocolate chips

Recipe's preparation

    Preheat the oven to 160ºC.
  1. Grease and line a rectangular tray (28cm x 20cm) with baking paper or use silicone snack bar moulds.

    If the coconut oil is not liquid, place the coconut oil into the Thermomix bowl and melt on 40ºC/ 1 minute (or until melted)/ Speed 2.

    Add honey and mix for 30 sec/ SP2.

    Add vanilla paste, cinnamon and salt and mix 5 sec/ SP 4.

    Add rolled oats, coconut, mix seeds, tapioca flour and puffed rice. Mix 10 sec/ Counter-clockwise operation"Counter-clockwise operation" SP 2. Scrape down the sides of the bowl and repeat.

    Add the chocolate chips and mix for another 10 sec/ Counter-clockwise operation"Counter-clockwise operation" SP2.

    Pour the mixture into the prepared tray or silicone moulds and press down firmly and evenly.

    Bake for 25-30 minutes or until just golden. Allow to cool completely before cutting into slices.

Tip

You can swap seeds for nuts; tapioca flour for wheat flour and quinoa and rice flakes for oats if there is not a dietary restriction.

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
