Ingredients

Cake batter

  • 50 grams cocoa
  • 125 grams water, Boiled
  • 2 teaspoons vanilla extract
  • 150 grams raw almonds, (Or 125g plain flour)
  • 200 grams raw sugar
  • 150 grams olive oil
  • 3 eggs
  • 1/2 teaspoon bicarbonate soda
  • 1 pinch salt

Recipe's preparation

    Serves 8-12 slices
  1. 1. Preheat your oven to 170°C. Grease a 22 or 23 cm/ 9inch springform tin with a little oil and line the base with baking paper.

     

  2. 2. Measure and sift (optional) the cocoa powder into a bowl or jug and whisk in the boiling water until you have a smooth, chocolatey, still runny (but only just) paste. Whisk in the vanilla extract, then set aside to cool a little.

     

     

  3. 3.Mill almonds speed 9, 5-10secs. Set aside.

     

  4. 4. Mill sugar speed 9, 2secs. Add olive oil and eggs into TM bowl and beat together for about 30secs, speed 4 (optional to use butterfly) until you have a pale-primrose, aerated and thickened cream.

     

  5. 5. Reduce to speed 2-3 and pour in the cocoa mixture until combined (approx 15secs). Add in the ground almonds (or plain flour if using), bicarbonate soda and pinch of salt on speed 3, 15secs or until combined.

     

  6. 6. Pour this dark, liquid batter into the prepared tin. Bake for 40-45 minutes or until the sides are set and the very centre, on top, still looks slightly damp. A cake tester should come up mainly clean but with a few sticky chocolate crumbs clinging to it.

     

  7. 7. Let it cool for 10 minutes on a wire rack, still in its tin, and then ease the sides of the cake with a small metal spatula and spring it out of the tin. Leave to cool completely & sprinkle with icing sugar or eat while still warm with some ice cream, as a pudding.

    Delicious but needed a little longer for me being 50 mins to cook. Very sweet so if you're not a super sweet tooth, would suggest reducing the sugar a tad.

    This was perfect, a very yum moist chocolate cake. I used plain flour as I didn't have enough ground almonds and it disappeared in my house very quickly!

    Great cake! Can use other types of oil if the olive oil flavour is too strong
