Ingredients

Cake Mix

  • 200 grams Butter, chopped
  • 200 grams Dark Brown Sugar
  • 200 grams white chocolate melts
  • 1 heaped tablespoon golden syrup
  • 2 teaspoons Vanilla Essence/Extract
  • 180 grams water
  • 2 eggs
  • 300 grams Self Raising Flour

Icing Mix

  • 125 grams Butter
  • 250 grams icing sugar
  • 1 teaspoon Vanilla Essence/Extract
  • 150 grams caramel topping, (thicker the better!)

Recipe's preparation

    Making the Cake...
  1. 1. Pre-heat your oven to 150 degrees. Grease and line a cake pan (I used a 22cm round springform pan).


     


    2. Add butter, dark brown sugar, white chocolate, golden syrup, vanilla essence and water to the Closed lid and mix for 4 minutes/90 degrees/speed 3


     


    3. Allow the mixture to cool slightly, before adding the eggs and mixing 1 minute/speed 4


     


    4. Add self raising flour and mix 1 minute/speed 3


     


    5. Pour the mixture into the cake pan and bake for 1 hour, or until a cake skewer comes out clean. Stand to cool, then turn out cake and cover with Caramel icing.


     

  2. Making the Icing...
  3. 1. Add the butter, vanilla and caramel topping to the Closed lid. Mix for 1 minute/speed 4


     


    2. Add the icing sugar and mix for 20 seconds/speed 3. Add more icing sugar for a thicker icing for your cake.

Tip

For a more mud-like texture, take cake out when cake skewer comes out with only a little residue.

    I made this gluten free using aldi flour. I didn't have dark brown sugar so just used brown sugar. I am wondering if this is the reason it didn't have a very strong caramel flavour. The icing was super sweet though so next time I would make a few adjustements to quantities. Thanks for sharing tmrc_emoticons.-)
