  • 220 grams unbleached flour
  • 55 grams rice flour
  • 1/2 teaspoon baking powder
  • pinch salt
  • 5 grams fresh orange zest, be sure you don't include any of the white inner peal -- it's bitter
  • 5 grams aniseed
  • 120 grams caster sugar
  • 3 eggs
  • 5 grams vanilla extract
  • 5 grams amaretto

Recipe's preparation

  1. Preheat oven to 170 c and line a baking sheet with baking paper.

    Place unbleached flour, rice flour, baking powder, salt, orange zest, and aniseed in the bowl of your TM. Process for 20 seconds at speed 8, then put aside in a large bowl.  Place whipping attachment in TM.  Whip sugar and eggs for 20 seconds at speed 4.  Add vanilla and amaretto and whip again for 10 seconds at speed 4.  Fold the egg mixture into the flour mixture (don’t over mix it – just make sure it is uniform throughout).

    Spoon the batter into a pastry bag (or a freezer bag with a corner snipped off (the opening should be just over 1 cm)). Pipe the mixture into 2 long strips on the baking.  Use a knife to smooth and shape the strips.  Bake at 170c for 20 minutes.

    Remove from oven and cool on a wire rack for 10 minutes.  Using a sharp knife and cutting board, cut strips on the diagonal into 2 cm slices and place them again on the baking paper (stand them on their end and make sure there is space between each slice so they can bake evenly).  Place back into the oven and bake for an additional 12-15 minutes (until a lovely golden brown).

    Transfer to a wire rack and cool.  Store them at room temperature in an airtight container.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
