Ingredients
Muffin Mix
- 300 grams raw almonds
- 3 carrots, large
- 3 organic eggs
- 2 teaspoons vanilla extract
- 2 teaspoons cinnamon powder
- 1/2 teaspoon nutmeg ground
- 60 grams macadamia oil
- 90 grams Raw Honey
- 2 teaspoons baking powder, Gluten free
- 175 grams Organic Sultanas

Preheat oven to 160c.
Place almonds in the bowl and mill for 10 seconds on speed 9
Add carrots (approx. 3cm chunks) and mix for 5 seconds on speed 6.
Scrape down the sides of the bowl.
Add the eggs, vanilla, cinnamon, nutmeg, oil & honey and mix for 15 seconds on speed 5.
Add baking powder and mix for 5 seconds on speed 5.
Add the sultanas and mix for 5 seconds on speed 4 on "Counter-clockwise operation"
Pour into muffin tins prepared with coconut oil.
Bake for 30 minutes or until a skewer comes out clean.
Tip
You can serve these as they are, with coconut yoghurt or make a coconut icing (coconut cream, lemon juice & vanilla bean).

These are so amazing! I have been making these the past few weekends for snacks during the week. They keep really well in a container in the fridge. I substitute dried cranberries for the sultanas. Yum! Thank you

I made these the other day for our work snacks and they turned out lovely. I swapped out the sultanas with dates (after grinding the almonds put them in with the carrots), also didn't have honey so used rice malt syrup and the last of my agave. So delicious, I love that this recipe works well even with a few swaps. Husband loved em! As I didn't fill my muffin cups all the way, I managed to get 16 muffins, perfect snack sized portion

I also used almond meal instead of coconut flour/almonds - worked great
Hi, when using coconut flour I have read that you need to add a lot more eggs to account for it being so much drier.
Awesome recipe, sooo easy to make and family have gobbled them up in no time, I made mine in mini muffins and got 48 muffins ready for school lunches, but they haven't made it that far!!
