Ingredients

Beetroot Choc Brownies

  • 1 Fresh Beetroot, Tennis ball size
  • 80 g --- Butter
  • 100g 70-85% Dark Chocolate
  • 1/4 cup Coconut sugar
  • 1tspn vanilla extract
  • 3 eggs, (free range)
  • 3/4 cup flour of choice, Almond meal, Plain Flour, Rice Flour etc. If using coconut flour, only use 1/2 cup.
  • 1/3 cup cacao powder
  • 1/2 tspn baking powder, If using SR flour, omit this
  • 1/4 cup Almond milk, or milk of choice

Recipe's preparation

    Paleo Beetroot Choc Brownies
  1. Preheat oven to 180 degrees 

     

    Line a 9x9" pan with baking paper. I like to scrunch it into a ball then open out before i line, gets into the corners better. 

     

    Wash and trim your beet. CHop into 1/4's and place into bowl. Place Butter and Chocolate (broken up) into bowl too. 

     

    Place on lid and MC, 8 sec, sp 5. Scrape and repeat. 

     

    Add sugar and vanilla. 

     

    Place on lid and MC, 8 sec, sp 5

     

    Add eggs, one at a time 8 sec, sp 3

     

    Add flour, cacao, milk and baking powder, mix 30 sec, sp 3, reverse. Scrape down and repeat

     

    Tip into your pan, and cook for approx 20 mins. Its ready when the centre is slightly firm and not runny. Overcooking it will dry it out. Remember it will cook a little more while cooling.

     

    Cool in pan for 5 mins, then lift out using the paper onto a cooling rack. Serve warm! Enjoy. 

Tip

You can replace butter with coconut oil

If using coconut flour, only use 1/2 cup

Almond milk can be substituted for other milks
