Ingredients
- 120 grams water
- 3 eggs
- 90 grams Rice Malt Syrup (or honey)
- 30 grams coconut oil
- juice of half a lemon
- 50 grams tapioca flour
- 50 grams Coconut Flour
- 1/2 teaspoon Salt
- 1/4 teasponn bicarb soda
- 90 grams Butter, see EDC recipe
- 90 grams coconut sugar / rapadura/ panela
- 5 grams cinnamon

Preheat oven to 180 degrees.
Place eggs into mixing bowl and blend 5 seconds / speed 5.
Weigh in all ingredients and mix 6 seconds / speed 6.
Pipe mixture using a freezer bag with the end cut off into greased donut baking trays.
Bake for 15 minutes or until skewer comes out clean.
Glaze
Place cinnamon and sugar in tm bowl and mix 3 seconds / speed 5. Set aside in a shallow bowl.
Melt 90 grams of butter in thermomix for 3 minutes / 60 degrees /speed 1.
Pour butter into shallow bowl and dunk each donut into butter and then bowl of sugar and cinnamon to coat.
Enjoy immediately.
Donuts
Tip
You will need donut shaped baking tins available at most stores like Kmart etc.
No need to pipe it just makes it easier to get the mixture into the donut baking tins.

Butter isn't Paleo. I used coconut oil instead of butter. Thank you for a good recipe.
Can you use Coconut oil instead of butter?
YUM these are seriously delicious. I didn't read the full method first so I ended up throwing the butter, 20grams of sugar and the cinnamon into the batter mix but results are good. I just ended up half filling my larger muffin molds I don't have donut trays.
