Ingredients
CAKE
- 150 grams Brazil Nuts
- 150 grams macadamia nuts
- 6 medjool dates pitted
- 55 grams dried cranberries
- 40 grams Maple syrup
- 150 grams raw beetroot, peeled and quartered
- 200 grams desicated coconut
- 80 grams Cacao
- 1/2 teaspoon Vanilla Bean Paste
- 20 grams golden flaxseeds (linseeds)
Icing
- 2 Avocados, peeled and deseeded
- 60 grams cacao powder
- 175 grams honey
- 20 grams coconut oil
- 1/2 teaspoon Vanilla Bean Paste
- 1/2 teaspoon salt

Line a 15cm x 20 cm baking tray with baking paper.
Add the flax seeds to the bowl and mill 10 seconds / Speed 10.
Scrape down the side of the bowl.
Peel and cut beetroot in quarters and add to TM bowl and chop 3 seconds /speed 5. Scrape down the sides of the bowl with spatula.
Add Brazil and Macadamia nuts and chop 10 seconds / speed 5. Scrape down the sides of the bowl. Add the dates, dried cranberries, maple syrup and process mixture with the aid of your spatula for 30 seconds / speed 6.
Add the Coconut, Cacao, vanilla bean paste and process with the aid of the spatula 30 seconds / speed 6.
Pour mixture into lined baking tin and refrigerate or 1 hour.
Add Avodado, Cacao, Honey, coconut oil, vanilla and salt to TM5 bowl and mix 30 seconds / speed 6.
When base has set, using the spatula ice the top of the cake.

I made this today and the flavor is yummie, but Thermione was seriously struggling with mixing it. I had to mix it way longer than in the recipe and also had to add coconut oil to make it a bit more mixable. Any idea what i did wrong? Really the recipe itself has only got mostly dry ingredients though. Anyone else had this problem?
