Ingredients

  • 1 orange peel
  • 250 grams Unsalted Raw Cashews
  • 20 grams macadamia oil
  • 25 grams Coconut Flour
  • 1 teaspoon bicarb soda
  • 4 eggs separated
  • 70 grams filtered water
  • 1 tablespoon apple cider vinegar
  • 20 grams honey
  • 50 grams currants
  • 1 teaspoon allspice, ground
  • 1/4 teaspoon cinnamon ground
  • 1/4 teaspoon Cardamon, ground
  • 1/4 teaspoon ginger powder
  • 1/4 teaspoon nutmeg ground

Recipe's preparation

    Method
  1. Preheat oven to 180 C

    Whip eggwhites until soft peaks form. Set aside and rinse and dry bowl.

    Zest orange peel speed 9 for 5 seconds

    Add cashews and mill speed 9 for 10 seconds

    Add oil speed 6 for 15 seconds or until the cashews turn to butter

    Add egg yolks, water, apple cider vinegar, honey and spices speed 5 for 15 seconds

    Add coconut flour and bicarb speed 4 for 10 seconds. Scrape down sides of bowl and beat on speed 5 for 10 seconds

    Scrape mixture into a bowl and using the spatula, gradually fold in the egg whites and currants.

    Spoon mixture into a cupcake tray and bake for 20 minutes

    Once cooled pipe a cross on top using Thermomix coconut butter.

    Delicious cut in half and spread liberally with butter.

    This recipe is grain free, gluten free, dairy free and sugar free

    Ok but didn't blow me away. I also noticed suggestion of serving with butter- not very paleo I would have thought. Worth a try though

    Success!  Although after reading about others difficulties on the forum with beating the egg whites in the Thermomix I chose to do that part with my old mixer.  The texture was lovely so much so that hubby has asked could I possibly adapt to make him a carrot cake.

    I just used flour and water for the cross but of course with a small lump in the mixture the zip lock bag burst and coated 2 of them totally!!  :O Nevertheless very enjoyable!

    Did anyone use the butterfly for whipping the egg whites? I notice the only accessory needed is the spatula but the EDC says use the butterfly.

    I made the 25gm of coconut flour in the Thermomix using decisccated coconut. Easy and MUCH cheaper than purchasing from the health food shop.

    I also used grapeseed oil instead of macadamia as that's what I had on hand.

    I have printed this one out and will try once I have purchased the ingredients.  Sounds like they are a success.  Will let you know tmrc_emoticons.)  I do try to avoid wheat and after having 2 hot cross buns at work on Thursday I am feeling bloated and pained.

    I'm not sure where to find the coconut butter recipe you mention??...but these are just as delish without it! Light and fluffy, like a soft muffin, I would decribe them. I got 16 from the batch. Yummy

    It can get quite confusing as there are lots of people fon the internet creating their own versions of paleo. If you check Marks Daily Apple you will get a good run down on that page. (He is the guy who wrote 'The Primal Blueprint) I have been following a paleo diet for about 5 months now, the other thing that a true paleo diet doesn't use is seeds ie chia, sesame seeds etc. Essentially it is based on protein (meat/fish/eggs/good nuts), good fats, lots of vegetables and some fruit. Minimal if any caffeine. No dairy, no grains or sugars, no alcohol (I fail in that area from time to time!) no legumes, no seeds.

    I only have a superficial knowledge of paleo, as my interest is gluten free, although I thought it was peanuts that were the legume, as they are a ground-nut, whereas cashews are the seed of a cashew apple and so essentially a tree nut?   Mixalicious has certainly piqued my interest on this one, so I just had to stem my own curiosity!  I found a few opinions, for and against cashews being paleo ...
