Pancakes Fluffy Japanese Style

  • 3 egg whites, Large eggs
  • 1/4 level tsp cream of tartar
  • 225 grams plain flour
  • 40 grams sugar, Powdered sugar
  • 335 grams Milk
  • 2 level teaspoons baking powder
  • 1/2 level tsp salt
  • 1 level tsp vanilla extract
  • 1 portions egg yolk, Large egg

Recipe's preparation

    For the fluff
  1. Prepare large deep sided cooking sheet/tray/dish. Grease with butter or cooking spray or use cooking sheet or baking paper.
    Preheat oven to 200 degrees Celsius.

    Clean mixing bowl in preparation for whipping egg whites. Dry bowl.
    Insert butterfly Whisk.
    Add egg whites. Add cream of tarter.
    Mix 2-4 mins /speed 3.5 or until stiff.
    Either keep in bowl for now or remove into separate bowl. I used 2 bowls for ease of use.
    In another mixing bowl or same bowl prepare for pancake mixture next.
  2. Add plain flour, sugar, milk, baking powder, salt, vanilla, egg yolk.
    Mix 5-8 secs speed 4. Scrape down sides and repeat if needed till incorporated.
  3. Insert butterfly into pancake mixture or use the place bowl you prepared egg whites in ( I have 2 bowls).
    Incorporate egg whites on
    4-10 sec/speed 0.5 till incorporated.
    Remove bowl and use spatula to gentle fold in any lumps of egg whites.
  4. Gently pour mixture in large sheet Or cook in conventional way using stove top and egg ring.
    Place in oven for 7-10 mins till golden and bubbles are firm and popped on top and golden on edges.
    Serve as desired. I cut up into grid and piled 4 high with fresh fruit and maple syrup.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
