List.
- 1 zucchini, large
- 100 grams dark chocolate 70%
- 1 egg
- 250 grams Natural Peanut Butter
- 60 grams rice malt srup
- 1 teaspoon bicarb soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon Nutmeg
- 1 teaspoon vanilla extract

1. If making your own peanut butter do this first (refer to EDC)
2. Add Chocolate to mixing bowl and GRATE speed 9 for 7 seconds - Set Aside ( you can grate this for less time if you prefer a chunkier chocolate hit )
3. Add Roughy chopped Zucchini GRATE speed 9 for 5 seconds
4. Add ALL remaning ingredients INCLUDING reserved chocolate MIX for 30 seconds speed 4 untill all combined.
5. Pour into lined baking tin ( i used a rectangle slice tin) bake in oven (180'c) for 35 mins, cool in tin, slice and enjoy
Preheat oven to 180'C
Tip
My husband said this was super yummy served with ice cream as a desert. Kinda takes the clean away, but still a much better choice than some puddings.

I've recently been diagnosed with Gestational Diabetes and this recipe with the substitution of Natvia for the rice malt syrup is going to be one of my saviours!! I wasn't a huge fan of it by itself, but heated up with cream is an absolute winner especially at only 4g carbs per square!
