Ingredients
Peppermint Black Bean Brownies
- 1 Tin of black beans, drained and rinsed
- 2 eggs
- 25 grams Cacao, or cocoa powder
- 130 grams Raw Honey
- 50 grams coconut oil
- 1/2 tsp baking powder
- 1 pinches salt
- 2-4 drops peppermint oil or essence
- 85 grams chocolate chips, plus extra to scatter on top

- Preheat your oven to 180c.
- Line a slice tray with baking paper or grease a brownie tin. I like to use the rose gold brownie tray from the Mix Shop.
- Place all ingredients into your Thermomix bowl, except for the chocolate chips and "Blend" blend with MC in "Closed lid" for 10 seconds on speed 6. Scrape down the sides of the bowl with your spatula.
- Add chocolate chips and stir"Gentle stir setting" on reverse "Counter-clockwise operation" for 10 seconds on speed 1.5.
- Pour batter into prepared slice tin or brownie tin and top with extra chocolate chips.
- Bake for 30-35 minutes or until a skewer comes out clean.
Method
Tip
If you only like a hint of peppermint just stick to two drops of essential oil or essence.
These are a big hit with the kids! They also freeze well for up to two months.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
