Ingredients
Banana apple and oat pancakes or pikelets
- 70 grams organic rolled oats
- 2 bananas, cut into pieces
- 4 eggs
- 160 grams Milk of choice
- 40 grams Butter, softened
- 1 green apple, cored and cut into quarters
- 1 teaspoon cinnamon
- 1 tablespoon chia seeds
- 160 grams spelt flour
- 2 teaspoons baking powder

- Pour oats into mixing bowl and mill, 10 seconds on speed 8
- Add bananas, eggs, milk, apple, cinnamon, butter and chia seeds. Blend for 25 seconds on speed 8. Scrape down sides of mixing bowl with spatula.
- Add flour and baking powder and blend 8 seconds, speed 5 or until combined.
- Place a non-stick frying pan over medium heat. Working in batches, pour batter into pan and fry for 2-3 minutes on each side until bubbles appear, or until golden and cooked through.
Transfer onto a plate and cover with a kitchen towel to keep warm.
This recipe makes approximately 10 pancakes or 24 pikelets. - Serve topped with butter, raw honey, maple or golden syrup and fresh berries.
These are also delicious topped with jam and you can add fresh whipped cream.
Tip
You can make the batter the night before and keep overnight in the fridge if you want a quick and easy breakfast.
