- 120 grams raw sugar
- 115 grams Butter
- 2 eggs
- 1 tsp vanilla extract
- 210 grams self-raising flour
- 10 grams dessicated coconut
- 130 grams Milk
Topping
- 2 apples, small
- ground cinnamon

- Into clean dry bowl, add sugar and mix 10 sec/sp9.
Add butter and melt 30 sec/90 deg/speed1, then mix 1 min/speed 3.
With blades rotating on speed 3, add eggs one at a time through hole in mixing bowl lid.
Add vanilla, flour, coconut and milk and mix 20 sec/speed 5.
Spread batter into lined 30cm x 20cm shallow tray.
Peel, then grate apple over surface of cake, then sprinkle with ground cinnamon.
Bake at 180 deg C fan forced for 35 minutes or until a skewer comes out clean.
Tip
This cake was a favourite that my mother often made when I was a child. I have converted it for the thermomix.

Lovely cake, so light and fluffy. Too crumbly for the lunchbox but makes a nice cake with ice cream and cream. Thanks for sharing.
