Ingredients

Pumpkin Bread

  • 30 g pumpkin seeds
  • 300 g water
  • 200 g pumpkin, cubed
  • 50 g coconut oil
  • 50 g almond butter
  • 1 tsp vanilla extract
  • 2 eggs
  • 45 g almond meal
  • 25 g Coconut Flour
  • 50 g stevia
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.25 tsp ground ginger
  • 0.25 tsp ground cloves

Recipe's preparation

  1. Preheat oven to 175 degrees celsius and line a loaf tin with baking paper and set aside
  2. Place a small bowl on mixing bowl lid and weigh 30g of pumpkin seeds into the bowl. Set aside bowl
  3. Weigh 300g of water into mixing bowl, place varoma dish on mixing bowl lid, and weigh 200g of cubed pumpkin into varoma dish. Secure varoma lid and steam 12min/varoma/speed 1, or until cooked through.
  4. Set varoma aside and empty and dry mixing bowl.
  5. Add 50g coconut oil and 50g almond butter into mixing bowl and melt 3min/50 degrees/speed 2
  6. Add cooked pumpkin, 1 tsp vanilla extract and 2 eggs to mixing bowl. Combine 30sec/speed 6. Scrape down sides of mixing bowl
  7. Add 45g almond meal, 25g coconut flour, 50g stevia, 0.5tsp baking powder, 0.5tsp salt, 1tsp ground cinnamon, 0.25tsp ground nutmeg, 0.25tsp ground ginger and 0.25tsp ground cloves. Combine 20sec/speed 4
  8. Pour mixture into prepared loaf tin and sprinkle with pumpkin seeds. Bake in oven for 35 mins on 175 degrees celsius. Cover tin with foil and cook for a further 10 mins, until skewer comes out clean.
  9. Cut into 10 slices and serve warm or cold with 2tbs of greek or coconut yoghurt.
