Cake Batter

  • 85 grams Butter
  • 160 grams SR flour
  • 125 grams Milk
  • 1 egg
  • 100 grams sugar
  • Sliced fruit for top of the cake
  • cinnamon sugar

Recipe's preparation

  1. Preheat oven to 200 deg (190 for fan forced)

    Add butter to bowl.  Melt Butter - 3min/90deg/speed 3

     

  2. Add all other ingredients other than the fruit and cinnamon sugar.  Mix for 10 seconds/speed 5, scrape down and repeat for 10 seconds/speed 4 if required

  3. Add cake batter to a Slice Tin.  Add sliced fruit to the top of the cake and sprinkle with cinnamon sugar.

  4. Bake for 25-30 min (or until a skewer comes out clean).

    Eat hot or cold!

Tip

You can use fresh or tinned fruit

Goes well with the EDC vanilla custard for a dessert

    This is such an easy great recipe. The first time I made it I used a 800 tin of sliced pear. I've just made it for the second time with thawed frozen cherries and a drizzle of cherry jam over the top. Lovely cake. Thanks for a great recipe.

    Great for using up overripe stone fruit, and super easy too. My kids love it for a school snack. I generally make a double batch - a single one doesn't get us very far at all! I reduce the sugar a bit. Thanks for the recipe!

    I used rapadura sugar and subbed 60g wholemeal SR flour for SR flour. Used plums for fruit on top. Lovely, fluffy, simple cake with good flavour. Thanks for recipe, really happy with the result.
