- 1 brown onion
- 1 clove garlic, peeled
- 20 grams olive oil
- 650 grams pumpkin
- 450 grams sweet potato
- 2 tablespoons vegatable stock paste
- 1 teaspoon paprika
- 600 grams water

- Add onion and garlic to bowl, chop 7 sec/speed 5
Scrape down sides of the bowl and add olive oil and cook for 6 min/varaoma temp/speed 1
Chop Pumpkin & Sweet potoato into small chunks (approx 4x4cm)and add to the bowl once onion is cooked.
Add water, stock, & paprika. Cook for 20 min/speed 1/reverse/ 100 deg.
Make sure vegatables are very soft (if not cook for another 5 min) and the blend 1 min/speed 5 gradually increasing to speed 9.
Serve with a spoonful of cream or sour cream if you desire!

Tip
Suitable for TM 31 and TM5
If you are using a soft skin pumpkin you can keep the skin on and use the seeds however you may need to blend a little bit longer.

It is indeed the best pumpkin soup ever! I often make it for guests, many who are vegan or vegetarian. Nothing but praise in return! The challenge is to not eat it all before the guests arrive ...
I put 2 onions and triple the garlic as we love those flavours and I saute the onion and garlic in butter instead of oil. I use a butternut pumpkin as they are really sweet. And I half the water as I love a thick soup.
Yum recipe, thanks! I changed a few things around too, because of what I had on hand - used carrots instead of kumara, & a bit of cabbage. I also added half a tsp of curry powder, & for the stock I used my homemade bacon stock. Delicious!

Used skinny mixers stock paste (way better than BCB one)
Added an extra garlic clove, and a splash of thickened cream at the end maybe a quarter cup.
Also added a teaspoon of curry powder same time as felt it need a boost.
Highly recommend this recipe. I did make a few alterations as I didn't have enough sweet potatoes so I did half sweet potatoes and half normal potatoes. I also swapped out the paprika for curry powder!

Cooked this tonight in my TM6. It was quite nice, but missing a bit of flavour for us.
I will be adding 1 tspn cumin to the mix and a carrot next time. I also added 3 cloves of garlic instead of one.
Otherwise nice and will use this method again.
