Ingredients

Cake

  • 200 grams Butter
  • 4 --- eggs
  • 1 teaspoon vanilla extract
  • 120 grams flour of choice
  • 1 teaspoon baking powder
  • 1 teaspoon ground mixed spice
  • 1/2 teaspoon ground ginger
  • pinch salt
  • 200 grams ground almonds
  • 90 grams castor sugar
  • 90 grams brown sugar
  • 4 stalks rhubarb, sliced 1cm thick
  • 3 tablespoons flaked almonds
  • 2 tablespoons raw sugar
  • 1/2 litre whipping cream

Recipe's preparation

    PREPARATION
  1. Grease 2x 20cm cake tins and line the base with baking paper.

    Preheat the oven to 160 degrees C fan bake.

    Place butter into bowl- 2 mins, 60 degrees, speed 4.

    Add eggs and vanilla- 20 secs speed 4.

    Add all other ingredients (except rhubarb, flaked almonds, raw sugar or cream).

    Mix 30 secs speed 4.

    Add half of the rhubarb and mix 5 secs speed 4.

    Divide the mixture evenly between the two tins.

    Top each cake with remaining rhubarb, raw sugar and flaked

    almonds.

    Bake for 30 minutes until the tops are golden and cakes are firm to the touch. Cool completely before removing from tins.

    Assembly- Place one cake on a serving plate and spread with whipped cream. Top with second cake rhubarb side up.

    Dust with icing sugar. Makes 1 cake.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Super yummy. Made GF & DF. Made in one tin and served with custard for dessert. Used my leftover almond pulp from the mornings almond milk which had been semidried.

    A thumbs up from the kids, family and visitors for this one.
