Ingredients

Rich Christmas Fruit Cake

  • 1,000 g mixed dried fruit
  • 200 g glace cherries
  • 100 g dried figs - chopped
  • 250 g Marsala, port or sherry
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp ground cloves
  • 1 tsp ground ginger
  • 1 tsp vanilla essence
  • 1 tsp lemon essence
  • 1 tsp almond essence
  • 1 tsp bicarbonate of soda
  • 125 g Milk
  • 250 g dark bown sugar
  • 250 g Butter
  • 100 g pitted prunes
  • 100 g pitted dates
  • 3 eggs
  • 375 g plain flour

Recipe's preparation

  1. Soak mixed dried fruit, cherries and dried figs in Masala, port or sherry overnight or up to a month.

    Combine macerated fruit, spices, essences, bicarbonate of soda and dark brown sugar in a large bowl.

    Chop prunes and dates on speed 5 for 6 seconds.

    Add to spiced fruit mixture.

    Melt butter in milk for 5 minutes at 90C on speed 1.

    Turn to speed 5 and gradually increase to speed 9 to allow warmed milk and butter to clear prune and date left in bowl after chopping.

    Pour over spiced fruit along with beaten eggs and flour.

    Hand mix only until combined.

    Transfer mixture to a baking parchment lined 20cm cake tin.

    Use spatula to smooth batter a little up the side of the tin leaving a slight hollow in the middle.

    Bake at 150C for 20 minutes, then reduce heat to 130C and continue cooking for 2 hours and 40 minutes or until skewer tests clean.

    Leave the cake in the tin and allow it to cool over 12 hours wrapped in a thick clean towel.

     

Tip

To ensure a moist fruit cake it is essential to cook it at a low temperature for a long time.  

The cake must be cooled slowly to avoid evaporation and drying out.

Before wrapping in cling film your cake benefits from a little more Christmas cheer - sprinkle over another 60g of Marsala, port or sherry.

    I made two cakes, each tin about 18cm. Used chocolate port instead of sherry. Glazed with fig jam and fed with Grand Marnier. Looks fab

    I’ve made 12 of these cakes already for family and friends this year.
    thanks for sharing a great recipe. I’m able to make two rectangular cakes out of one batch. I’ve also utilised both dried and fresh figs, given that I have a fig farm behind me with great results.

    Absolutely fantastic recipe! I've made six of these cakes this Christmas. My friends & family cannot get enough of it! I used cognac in the ones that I made & I also poured an additional 100mls of cognac on it immediately after I got it out of the oven. So easy & incredibly delicious!

    Thanks for such a simple put together Christmas Cake.
    Im a newbie to cooking with the Thermie and running behind on my Christmas preparations so this was great to use our macerated fruit (sitting for a month in fortified wine).
    Two batches now humming away in the oven and kids licking spoons.
    Can’t wait to taste the end product - of course it will need another drink while cooling just to finish!

    Thanks for a lovely recipe. I made it with gluten free flour, switched around the fruits and ended up with two cakes. I also used brandy and will continue to douse the cakes in the coming weeks.

    Delicious! i hate dates so we used 200g prunes. We got two cakes out of this mix - one in a 25cm round tin, and enough for another decent sized load tin. Lovely a moist. We will def be making this again!
