Basil Mayonnaise Dip
- 50 g fresh basil leaves
- 1 clove garlic
- 40 g lemon juice
- 40 g soy sauce
- 250 g TM mayonnaise

Chop basil and garlic on speed 8 for 8 seconds.
Scrape down sides of bowl.
Add lemon juice, soy sauce and 100g mayonnaise and process on speed 8 scraping mixture down sides of the bowl until pureed.
Stir in remaining mayonnaise for 3 seconds on speed 4.
Serve with florets of raw cauliflower, sliced carrots, cucumber, celery, capsicum and cherry tomatoes.
Tip
In summer when basil is plentiful double up the basil, garlic, lemon juice and soy sauce, Add 100g mayo to puree then freeze in small containers to use during the year.
Once thawed add extra mayonnaise to taste..
