Ingredients
Cup Cakes
- 150 grams plain flour
- 40 grams wholemeal plain flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1 1/4 teaspoons bicarbonate soda
- 2 egg yolks
- 190 grams treacle
- 80 grams brown sugar
- 65 grams Butter
- 130 grams yoghurt or sour cream
Icing
- 125 grams white sugar
- 1 teaspoon Butter
- lemon juice, from 1/2-1 lemon

Preheat oven to 180degC.
Put flours, cinnamon, ginger & bicarb soda in TM bowl & mix for 10 seconds, speed 4. SET ASIDE.
Put egg yolks, treacle, brown sugar and butter in bowl. Mix for 10 seconds, speed 5. Scrape down sides and mix for further 20 seconds, speed 5.
Add yoghurt or sour cream plus dry ingredients and mix for 20 seconds, speed 2. Scrape down sides and mix for further 20 seconds, speed 2. Use spatula to finish mixing if still a little bit of flour on top.
Put mixture into cup cake papers and bake in oven for about 20 minutes or until a skewer, inserted in middle of cup cake, comes out clean.
Put sugar in TM bowl and blitz on speed 9 for 15 seconds.
Add butter and lemon juice from 1/2 a lemon. Blitz on speed 4 until right consistency. Add more lemon juice if required.
