Ingredients
Rima's Maamoul
maamoul dough and filling
- 1000 grams fine semolina
- 500 grams Good quality Butter
- 450 grams white sugar
- 150 grams Milk
- 1 tablespoons dried instant yeast
- 1 packages mahleb
- 4 tablespoons Rosewater
- 4 tablespoons Orange Blossom Water
- 500 grams walnuts

- 1. add 250g walnuts, 1tbsp of rosewater and 1tbsp, orange blossom water and 75g sugar to the bowl- speed 5 for 3-5seconds depending on your liking (if you like it more coarse or fine)

3. add 150g sugar, half a pack of mahleb - 5seconds speed 3
4. add 250g butter - speed 5 7seconds
5. add 500g semolina, 2tbsp rose water, 2tbsp blossom water, 75g milk and half a tbsp of yeast - knead function 2.5mins
tip out into a large bowl
do not clean bowl
6. repeat steps 3 through to 5 with remaining ingredients tip out dough to previous batch..
prep minimum 6hrs ahead or overnight
weigh into 45g balls, shape into flat rounds, fill with walnut filling, press into maamoul mould, onto baking tray for 10-12mins until lightly golden in 170degree oven (time will vary dependinfg on your oven)
Tip
for pistachio filling, replace walnut for pistachios.
for date filling, 400g dates, speed9, 15seconds until a paste and add 2tbsp rosewater and orange blossom- speed 3, 10 seconds or until combined.
maamoul is traditionally made with both coarse and fine semolina, this is fine to do, before doing first step, add 500g fine and 500g coarse to the bowl, speed 2 for 10 seconds reverse to mix together, set aside then use in step 3 onwards
please use sugar/rosewater/orange blossom water ratios as a guide when making your dough.. some like it sweeter while others dont. if you want it sweeter add more sugar, rosewater/orange blossom and incorperate.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
