Sarah Maddison No Spread Vanilla Sugar Cookies
- 190 g castor sugar
- 220 g unsalted butter
- 2 eggs
- 1 tsp Vanilla Paste
- .5 tsp salt
- 1 tsp Corn Flour
- 440 g plain flour

- Place butter and sugar into bowl "Closed lid"
"Blend" speed 4, 30 seconds - Add one egg "Closed lid"
"Blend" Speed 4, 15 seconds - scrape down sides of bowl
- Add second egg "Closed lid"
Speed 4, 15 seconds - scrape down sides of bowl "Closed lid"
"Blend" speed 3, 10 seconds - Add Vanilla, Salt, Cornflour and Plain Flour "Closed lid"
"Blend" speed 4, 30 seconds - Place dough on lighlty floured surface and bring together in a smooth ball.
- Place dough in a ziplock bag or use your thermomix dough rolling matt and fold in half and flatten dough in between to about 6-9mm
- refrigerate for a minimum 15 minutes
- cut your cookies shapes and place on a lined baking tray
- put your cut shapes back in the fridge for 10 minutes and preheat your oven to 160 degrees celcuis
- bake cookies for 8-10 minutes until cooked.
- allow to cool for 5 minutes before transferring these to a cooling rack. decorate cookies once completely cooled and store in an air tight container.

This recipe is less sweet so the cookie bases are perfect to be topped with fondant or royal icing.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
