Sesame bars
- 250 grams sesame seeds
- 1 orange
- 1 lemon
- 100 grams raw sugar
- 100 grams acacia honey

- Lightly toast the sesame seeds in a non-stick pan, turning them over several times, until they start to smell and turn golden (about 3 minutes). Transfer to a bowl. Remove the lemon and orange rind (without the white part).
Put the lemon and orange peel in the jug and chop: 10 sec./vel. 7. Combine on the bottom with the spatula.
Add the sugar and honey and heat: 7 min./100°C/vel. 1.
Add the toasted sesame seeds and heat: 10 min./80°C//vel. 1. Pour the mixture onto a sheet of baking paper and cover with a second sheet of baking paper.
Spread the mixture evenly with a rolling pin until it is 1 cm thick. Allow the mixture to cool. Gently remove the top sheet of baking paper, place it on a cutting board and remove the second sheet of baking paper. Grease a sharp knife and cut the mixture into portions of the same size. Allow the sesame bars to cool completely and serve or store in a container.

The bars are kept in the refrigerator for about 1 week.
Pass the bars in tempered chocolate.
