Shortbread

  • 250 g plain flour
  • 50 g rice flour
  • 100 g sugar
  • 200 g Butter, Cold,chopped into 1-2 cm cubes
  • salt, Pinch

Recipe's preparation

  1. 1. Add ingredients in order listed to thermomix bowl including any optional flavourings

    2. Mix for 20 seconds speed 6, MC on.

    3. Turn out crumbs onto thermo mat or pastry sheet. Press together to form a ball. Do not knead.

    4. Wrap in thermo mat or cling film and rest in fridge 30minutes.

    5. Carefully roll out pastry to approx .5cm and cut into desired shapes.

    6. Bake for 20 minutes at 170c until pale gold in colour.

    7. Remove from oven & allow to rest on tray for approx 10mins before moving to cooling rack. (as they will crumble straight from the oven)

    makes 20-30 biscuits depending on the size of your shapes

Tip

Tip - you could also cook this in a small flan tin or springform with a removable base. To make petticoat tails, press the dough into tin to depth of .5cm. Pierce top of shortbread with a fork & score top with a knife or pizza cutter1/3 deep (in 10-12 portions). Allow to cool in tin before separating into pieces
