  • 125 grams unsalted butter
  • 100 grams sugar
  • 1 egg
  • 1 tablespoon lemon rind
  • 300 grams plain flour
  • 1 teaspoon baking powder
  • Raspberrry Jam

Recipe's preparation

    1. Preheat the oven to 180°. Line oven trays with Baking Paper.

    2. Cream butter and sugar for 30 seconds, speed 7. Scrape down the sides of the bowl and repeat if needed.

    3. Add egg and lemon rind and mix 30 seconds, speed 3. Scrape down the sides.

    4. Add the flour and baking powder. Mix 6 seconds, speed 6.

    5. Dough will be crumbly so at this point knead for 60 seconds. This will bring dough together enough to be able to roll it out.

    6. Roll out on a lightly floured Thermomat to 4mm thickness.

    7. Cut out rounds with a 7 cm cookie cutter.

    8. Cut out a round centre on half the biscuits.

    9. Bake for 10 to 15 minutes in 180° oven.

    10. Allow to cool.

    11. When biscuits are cool, spread Raspberry Jam on the whole biscuits and add biscuits with hole in centre on the top.
