Ingredients

  • 4 artichokes
  • Juice of one lemon
  • 1 onion
  • 30 grams extra virgin olive oil
  • 150 grams Finely chopped Bacon
  • 1 Measuring cup of White Wine
  • 300 grams water
  • 200 grams Freshly shelled Peas
  • 200 grams Freshly shelled Broad Beans
  • Small head of Romaine Lettuce
  • Salt and freshly ground Pepper to taste
  • Hanful fresh Mint
  • Shredded Pecorino to taste
  • Sliced toasted Ciabatta
  • 1 clove garlic

Recipe's preparation

  1.  

    Clean the artichokes by removing the hard outer leaves and the beard in the centre of the artichoke.

     

    Cut artichokes into quarters and then cut each quarter in half again.

     

    Set the artichokes aside in a bowl of water and lemon juice.

     

    Place onion and clove of garlic in the bowl and blitz 4 seconds on Speed 6.

    Scrape down sides of bowl with your spatula.

     

    Add Olive Oil and Bacon if you chose to use it and sauté for 5 minutes, 100°, Reverse Soft speed.

     

    Add the artichokes, white wine and water and cook 10 minutes, 100°, Reverse speed soft.

     

    Add shelled and cleaned Peas and Broad beans. Cook 20 min, 100°, Reverse speed soft.

     

    Season with salt to taste.

     

    Add the lettuce and mint which has been washed and cut into strips. Sauté 3 minutes, 100° Reverse Soft speed.

     

    Mix in shredded Pecorino and freshly ground pepper.

     

    Serve on warm toasted slices of Ciabatta bread.

     

Tip

If pecorino is not available you can substitute parmesan. Bacon can also be omitted if you want soley vegetables. Perfect for freshly harvested peas and broadbeans.
