Ingredients

CHOCOLATE COOKIES

  • 160 g Raw Almond
  • 100 g Coconut sugar
  • 1 egg
  • 30 g Raw Cacao
  • 1 tsp bicarb of soda
  • 1 tsp vanilla essence
  • 1 pinch himalayan pink salt

Recipe's preparation

    Chocolate Cookies
  1. 1. Put raw almonds into bowl, blend speed 9 / 40 seconds.  Scrape off sides. Blend again speed 6 / 40 seconds.  You now have almond butter.

     

    2. Add the coconut sugar into the bowl, mix speed 2 / 10 seconds.

     

    3. Add the egg into the mixture, mix speed 4 / 10 seconds.

     

    4. Add 15g raw cacao, mix speed 4 / 5 seconds.

     

    5. Add 15g raw cacao. mix speed 4 / 5 seconds.

     

    6. Add the rest of the ingredients, mix speed 4 / 5 seconds.

     

    7. Use a cookie scoop to form round, 1 tablespoon balls.

     

    8. Place these on a baking sheet lined cookie tray and slightly depress the round balls with a fork to look like cookies.

     

    9. Bake in a 180 degree oven for 10 minutes.

     

    10. Remove from oven to let cool for 15 minutes before removing from baking sheet.

     

Tip

1. At Step 7, the cookie dough should be thick and resemble play dough.  If it does not your almond butter is too oily.

2. At Step 10, please do not remove the cookies before they are cooled, they will fall apart, please be patient.

    very easy , didn't have coconut sugar so used caster sugar, was the only change I made
    Made 18, next time might make a little smaller

    My almonds didn’t turn to butter no matter how long I blitzed them I tried with two batches. The cookies went soft in the container. They were however very delicious! Help please!

    Too easy and so delicious. I didn't have whole almonds on hand, so used almond meal instead and ground for a little longer and they still worked really well. The only challenge is to not eat them all right away!!!

    Always double and prepare for a sticky mess but so delicious! plenty of times I have made and subbed almonds for cashews or whatever mix I have on hand always great! I like making mini ones for the kids that can be popped in lunchboxes. (we have no nut restrictions) make smaller than want as they grow in the oven quite a bit

    Amazing!!

    Best paleo cookies ever. My son helped make them and said "yum" to the dough... once they were made he was gobsmacked that there were even tastier. 

    Has anyone had luck doubling this recipe or just wondering if it's better to stick to smaller ingredients at a time?
