Dough
- 125 grams Butter, room temperature
- 1 tablespoon vanilla
- 160 grams caster sugar
- 1 --- egg
- 115 grams sour cream
- 16 grams Self Raising Flour
- 96 grams plain flour
Cinnamon middle
- 1 tablespoons castor sugar
- 1/2 teaspoon cinnamon

Place butterfly attatchment into thermomix.
Set oven to 180 degrees
Add butter, vinilla, sugar and egg. 25 sec / speed 4.
Scrape down sides using spatula. 5 sec / speed 7
Add Sour cream. 5 sec / speed 4
Add flour, incorporate in using spatula. "Gentle stir setting" 25 sec
line 1 loaf tin with non stick baking paper. Pour in 1/2 of batter (should be relatively thick) and spread evenly over the base of tray.
In a small bowl mix together castor sugar an cinnamon and sprinkle it ontop of the batter you just put in the tin.
Add the 2nd half of the batter to the tin.
Place in oven for 45 minutes.
Tip
Add chopped nuts to cinnamon middle.
Coat in cream cheese frosting from everyday cookbook pg52.

Helen-Gran: true, recipe should state speed 4 with this attachment, hopefully recipe creator will see this comment and amend recipe. Never use the butterfly attachment over speed 4. Consultants will tell you this too. A friend of mine years ago used her butterfly on speed 6 and it flew off and broke in the bowl 😱 it was terrible. Stay safe & well x

Made this yesterday - great taste! Think I'll use a little less sugar next time. I also wondered about using the butterfly at speed 9?
This cake is REALLY good, easy to make and taste is fantastic!!!
