  • 100 grams Sourdough starter, ripe
  • 125 grams Plant based milk, lukewarm
  • 115 grams vegan butter, melted
  • 40 grams sugar

Recipe's preparation

  1. Add all ingredients to the mixing bowl. Knead Dough Dough mode"Dough mode" /3 min. Dough should be soft and coming away from sides of the bowl. If the dough is too wet, add a little more flour and knead until it is no longer sticky. If the dough is too dry add a dash of milk and knead until it forms a smooth dough.

  2. Turn out into a bowl or proofing container and cover. Set aside in a warm spot until doubled in size (at least 2 hours). If you are using a fruit filling, prepare this now.

  3. Roll out dough into a large rectangle. Spread filling/s over dough ensuring you reach the edges. (For cinnamon rolls, brush with melted butter before sprinkling with sugar and cinnamon mixture). Tightly roll from the long edge to form a large tube. Use a sharp knife to cut into 12 individual buns. place each bun on a lined baking sheet approximately 2cm apart. Cover and let rise for at least one hour in a warm room, or overnight in the fridge.

  4. Bake in a preheated oven at 180°C for 15-20 minutes. Cool rolls completely before drizzling with a simple sugar glaze.

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
